Soy Chicken Friday

To savor the soy chicken that we had during food festival in Siam mall in Bangkok again, I cooked this easy to make recipe today. Tried to capture it through video and it’s quite rough since I’m holding the camera while cooking. Anyhow you have to try this recipe, it’s effortless to put together, does not take a lot of time and it is scrumptious!

This recipe calls for cooking the chicken in a large wok using vegetable oil.

1/3 cup soy sauce
1/3 cup water
6 tablespoons dark soy sauce
4 tablespoons brown sugar
1 1/2 green onions
6 slices ginger
1 stalk of lemongrass
4 crushed cloves garlic
4 chicken thighs w/ skin
4 chicken wings
2 tablespoons vegetable oil
Extra salt, and freshly ground black or white pepper, to taste

In a large wok, heat the oil over medium heat. Saute the ginger and garlic until golden brown.  Add the chicken thighs and cook for 5 to 6 minutes until browned. Add the soy sauce mix in brown sugar then add the lemongrass and green onion.  Put a cup 1/3 cup of water and let it boil for few minutes. Season with salt and freshly ground black or white pepper if desired. Simmer, uncovered, on low heat for 10 to 15 minutes, or until the chicken is cooked through, adding water if needed. Serve soy sauce chicken hot over steamed rice.
